Purpose and description of the content of education:
The main goal of the course is to provide basic knowledge on the nutrition processes and nutrients. The course begins with the basic information on chemical structure and biochemical functions of the main groups of macronutrients: carbohydrates, proteins and fats. The second part of the course focuses on the chemistry and biochemistry of micronutrients, such as vitamins, and minerals. Significance of a balanced diet is the topic of the final part of the course. Improper nutrition whether it is overnutrition or undernutrition and its adverse health effects are presented and discussed briefly. The close link between a properly balanced diet and sustainable agriculture is underlined. Two first parts of the course constitute about 75% of the presented material. Grading is based on the final, in-class exam. Students are expected to participate actively in this course. During workshops, they discuss some aspects of the course either mentioned briefly in the lecture or not mentioned at all. The list of these additional topics (like food additives, unbalanced diet and the risk of high level of cholesterol) to be discussed will be given in advance. The educational materials such as research papers, web pages, videos, and official documents will be provided by the lecturer. Students are to prepare and present in class one short paper as an introduction to the in-class discussion. Good quality of the presentation and active participation count as a bonus toward the final grade.
